Japanese Yams

They are purple on the outside and white on the inside and they are nothing like a sweet potato.  Very sweet and smooth, no stringiness. All you do is wash them, cut out any bad spots, smear them with coconut oil and salt them.  Bake at 400 for 1 to 1.5 hours depending upon how big they are. 
Take them out of the oven and cut them open making a boat out of each one and just put cinnamon on them or do what I do and slather them with coconut oil and then add the cinnamon. That’s it. To die for!

Ingredients
  

  • 1 medium japanese yam
  • coconut oil
  • salt
  • cinnamon

Instructions
 

  • Preheat oven to 400
  • Wash japanese yam, pierce with a fork and add salt
  • Cook for 1 to 1.5 hours depending on size of yam.
  • Cut in half, slather with coconut oil, add cinnamon to taste.
