  • Giblets rinsed
  • 1/2 cup onion chopped
  • 4 garlic cloves
  • 1/2 cup celery chopped
  • turkey seasoning
  • 1 tsp salt
  • 1/2 stick butter
  • 4 tbsp Einkorn flower


  • Cook giblets for a day or two with onion, garlic, celery and seasonings in a saucepan on the stove. (Place in the refrigerator at night.)
  • Strain through colander saving the meat (just enough for a quickie lunch) discarding the bones (or saving them to make bone broth along with the turkey bones)
  • Put strained gravy back in sauce pan and slowly add melted butter mixed with flour to thicken the gravy
