Baked Spaghetti Squash

There are a number of things that you can literally make in 10 minutes or less for dinner that I am going to be sharing with you. While not everything I make takes only 10 minutes or less, everything I make DOES use whole ingredients and simple preparations. 
For example, last week I gave you a recipe for baked chicken. The prep time for the baked chicken plus a vegetable was 10 minutes. However, the cooking time for the chicken was 1 hour depending upon the size of your chicken breasts.  Another item that has very little prep time but a bit of baking time is a spaghetti squash. 
Baked Spaghetti Squash Recipe
Cut squash in half, scrape out the seeds, baste with lots of olive oil and sprinkle with your favorite seasonings. That takes about three minutes. Bake from 30 to 45 minutes depending upon the size and also the type of spaghetti squash. (For some reason, the last few squashes I purchased had to be baked much longer. I think it was a different type of spaghetti squash.)                                       
Scrape out the “spaghetti” with a fork and put it in a bowl.  Top it with your favorite warmed marinara sauce and some grated cheese. I do not make my own marinara sauce as there are some on the market that I think are absolutely delicious and they’re very clean. Anytime I can save time using a product that’s already made, I do.
This is another meal that only takes a few minutes to prepare and gives you 35 or 45 minutes to do your thing.  You can set the table if you’re feeding a crowd or put your tray table together if it’s just you, take the dog out for a walk, clean up the kitchen, read your favorite book, listen to the news etc.
Even with longer baking times, the super-fast prep time associated with baked spaghetti squash leaves little room for excuses. It also heats up very easily and makes good leftovers.

  • 1 medium spaghetti squash cut in half
  • 2 tbsp olive oil
  • 1 cup marinara
  • 1/2 cup grated parmesean cheese


  • Preheat oven to 425 degrees
  • Cut squash in half lengthwise and scrape out seeds
  • Baste with olive oil and sprinkle with your favorite seasonings
  • Bake for 30-45 minutes
  • Once done, scrape out "spaghetti" into a bowl and top with marinara and cheese
